Long Term Cruising Starting in the Med

I purchased my new (to me) yacht in September 2018 and it is currently located in Leros, Greece.
My plan is to spend the first 2-3 months sailing around Leros and surrounding islands, while I get familiar with the yacht, perform any maintenance and work out what and where any additional equipment will be added. There will be a significant amount of time spent at anchor during this time.
The yacht will eventually be fitted out to be as self sufficient as possible.
I am looking to move aboard full time in early 2020. Once this happens I will be sailing to non EU countries in the Med every 3 months to meet my 90 day visa requirements.
My future plans include sailing to the Caribbean, Pacific and Indo China. I have no fixed timeframe and other than a handful of places I would like to visit, I am open to other destinations.
I am seeking a compatible and preferably long term crew member who may be interested in being part of this journey or larger sections of it.
All onboard costs will be shared (food, fuel, Marina’s etc)
I will be sailing on a budget but also want to explore the destinations I visit. I am physically fit (even though it may not look it :)) and can walk, hike and ride a bike all day long.
My preference is to anchor rather than spending the money in a Marina, although there will be the odd time that it will be necessary to berth in a marina.
I am not the best cook or a great fisherman, but in time I will be, thanks to the internet and YouTube.
I am easy going and a bit of an introvert. I plan and research most things I do.When it comes to music it’s always playing in the background, I am an 80’s Pop & Rock tragic but I like anything that’s easy listening.
I am not looking for romance but just the company and friendship of another person and preferably a lady who is age appropriate.
